- 150g Butter, cut into cubes
- 3tbsp caster sugar
- 3tbsp golden syrup
- 6tbsp cocoa powder
- 225g biscuits crushed (mixture of Digestives and Rich Tea work well)
- Handful of dried cranberries or other dried fruit
- 110g Milk Chocolate
- 110g Dark Chocolate
- 6 Glace Cherries cut in half
- Chocolate covered Pretzels
- Icing Eyes (or use 50g white chocolate melted)
- Line a 12 hole muffin tin with paper cases.
- Melt the butter, sugar, syrup and cocoa powder in a large saucepan.
- Once melted stir in the crushed biscuits and berries.
- Divide between the 12 paper cases and pack down well. Then place in the fridge.
- Break the milk and dark chocolate into a bowl and melt in the microwave in 20 second bursts.
- Take the paper cases out of the fridge and spoon the melted chocolate over each cake.
- Decorate each cake with 2 chocolate pretzel antlers, Icing eyes and half a glace cherry for Rudolf’s nose.
- Place back in the fridge and allow to set for at least 2 hours
